Braid Bread 3 ways



Well today I started a breid frenzy....ahahahahahahha I bake 6 of them today along with the cheff at my school ( It was really cool..only the 2 of us...I got to learn amazing things).

We checked what we had to work with it....sO we came up with these 3 : Ham anc cheese, corn'n cheese and a simple sesame seed one.

First Im going to show you the stufffed with corn n' cheese, simply because it was way tOo amazing , even tought not diet or lactose or whole milk intolerant (wich I am xD) but I didn't care It was way too good. :)

Corn n' Cheese Braid




Ingredients:


  • 5 cups of bread flour
  • 1 oz of milk powder
  • 7 oz of water
  • 6 oz of butter
  • .25 oz of salt
  • .50 oz of fresh yeast 
  • 1 tbsp od dried basil 
  • 2 tbsp of sugar
  • 2 small eggs


Directions:
  1. Weight ingredients
  2. Make filling an let it cool. (Directions and Ingredients for the filling below. 
  3. Make a well with dry ingredients (flour,dry milk and salt )
  4. In the center dissolve sugar, eggs and yeast. 
  5. Mix well and slowly start adding flour.
  6. When there's no liquid add the butter and knead for about 10 min.
  7. Add the basil 
  8. Knead the dough to integrate the seasoning.
  9. Let the dough rise for 20 min
  10. Divide in 2 
  11. Take each haf and roll it in a rectangle way.
  12. In the sides make cut as shown above (about 8 or 10 and start putting together
  13. Add 4 oz of ricotta cheese and 2 oz of manchego cheese later half of the corn filing topping it with another 2 oz of manchego cheese.
  14. Seal with  egg and brush top also with egg
  15. Let them rise until they doble (About one hour)
  16. Bake at 


Filling: 
  • 8 oz of ricotta cheese
  • 8 oz of manchego cheese
  • 16 oz cream 
  • 1 large onion
  • 8 oz of drained corn 
  • Oil for frying.

Directions:
  1. Fry the onions and corn, when is turning a little golden lower heat and simmer them in cream.
  2. Let it cool.


Ham and Cheese Braid



Ingredients:

  • 5 cups of bread flour
  • 1 oz of milk powder
  • 7 oz of water
  • 6 oz of butter
  • .25 oz of salt
  • .50 oz of fresh yeast

  • 2 tbsp of sugar
  • 2 small eggs

  • Make a well with dry ingredients (flour,dry milk and salt )
  • In the center dissolve sugar, eggs and yeast. 
  • Mix well and slowly start adding flour.

  • Add the basil 
  • Knead the dough to integrate the seasoning.
  • Let the dough rise for 20 min
  • Divide in 2 
  • Take each haf and roll it in a rectangle way.
  • Divide in 3 and cut with a pizza cutter 
  • Add 8 oz of sliced cheese and ham and brush with eggs the sides. 
  • Glue the 3 of them and braid them as shown above.
  • Seal with  egg and brush top also with egg, add sesame seed if desired. 
  • Let them rise until they doble (About one hour)
  • Bake at 180C for 20 min aprox.
Sesame Seed Braid 



It's just like the other, but the brading is a little different.
  • Weight ingredients
  • Make filling an let it cool. (Directions and Ingredients for the filling below. 
  • Make a well with dry ingredients (flour,dry milk and salt )
  • In the center dissolve sugar, eggs and yeast. 
  • Mix well and slowly start adding flour.
  • When there's no liquid add the butter and knead for about 10 min.
  • Add the seeds
  • Knead the dough to integrate the seeds.
  • Let the dough rise for 20 min
  • Divide in 2 
  • Each half divide it in 4 , and those 4 in another 4 (for a total of 16 strips) 
  • Each of these braid them as shown above and carefully glue with eggs.(See direction below)
  • Glue the 3 of them and braid them as shown above.
  • Seal with  egg and brush top also with egg, add sesame seed if desired. 
  • Let them rise until they doble (About one hour)
  • Bake at 180C for 20 min aprox.





Well I hope you enjoy these recipes, they really aren't as complicates as they seem....and the end result is amazing.
